C108 Opens in Central with an Unparalleled Café and Cocktail Experience

Nestled in the heart of Central, just a stone throw away from Tai Kwun, the new cafe and bar concept C108 is now open. Founded by four good friends, C108 aims to offer guests a cozy and inviting space to unwind and indulge in quality brews in the day and cocktails at night. The name "C108" captures the dual identity of the establishment - the "C" representing coffee and cocktails, while the "108" is the collective age of the founders by the time the concept was conceived. “C” also represents community, as C108 serves as a collaborative space where people share stories and forge connections.


Stepping into C108 is akin to being transported to a tranquil Mediterranean sanctuary, the space awash in a soothing palette of warm neutrals and rustic elements, effortlessly combining natural elegance with a relaxed, laid-back ambiance. 


C108 offers an unparalleled café and bar experience. Through thoughtfully designed lighting and dynamic shelving, the space is transformed to provide a completely customized backdrop that sets the perfect ambiance. As you step into the cafe, you will be welcomed with an inviting ambiance, with the coffee supplies and equipment on full display, inviting guests to immerse themselves in the art of specialty coffee. However, as the sun sets, C108 seamlessly transitions into a cozy, intimate bar, showcasing a curated selection of premium spirits, effortlessly separating itself from the bustling nightlife that surrounds it.


Helmed by experienced bar manager and C108 co-founder Gurung Prasantraj (Prasant), previously the head bartender at Barcode of the Tell Camellia Group, the bar is guided by the motto 'every sip tells a story'. The cocktail menu pays homage to the origins and creators of each cocktail. Each expertly crafted cocktail at C108 serves as a window into the rich history and cultural context of the iconic classics, while also showcasing innovative twists that elevate the flavors and provide a new tasting profile.

For a refreshing burst of vitamin C, indulge in the Vitamin Sea cocktail - a tropical interpretation of the classic gimlet, created by the esteemed "Naval doctor Rear-Admiral Sir Thomas Desmond Gimlette" to sustain sailors on long voyages. Inspired by the historic remedy of using sailors' daily gin ration to mask the sourness of prescribed lime juice, this unique gin-based libation blends umami notes with hints of seaweed, pineapple, and sesame oil. The result is a captivating balance of salty brine and subtle fruitiness, evoking the essence of the sea. 


For a time-honored hangover remedy, try our refreshed nutrient-rich tomato base Bloody Mary, Pete. The legendary Bloody Mary was first created by the French bartender Fernand "Pete" Petiot at the Harry’s New York Bar in Paris. C108 has now put a delightful spin on this classic, transforming the Bloody Mary into a savory and spicy delight that evokes the flavors of a ‘cherry tomato and basil salad’, with a balsamic flavor profile and mini mozzarella.

The beloved Margarita was first invented by Francisco "Pancho" Morales in Mexico. Inspired by the rich cultural flavors of Mexico, including vibrant spices, the masterminds at C108 have crafted a modern interpretation known as Mr. Cooper. This innovative cocktail features a harmonious blend of Ancho chili and Habanero pepper. Perfect for tequila connoisseurs, the Mr. Cooper is both delightfully spicy and refreshingly crisp, with a well-rounded balance achieved through the incorporation of herbs and a creamy finish courtesy of avocado.


For a tantalizing pre- or post-dinner drink, prepare to be mesmerized by our reimagined Negroni, known as Sorcerer’s. The origins of the Negroni can be traced back to the Italian adventurer and cowboy, Count Camillo Negroni, who famously requested that bartender Fosco Scarselli prepare his Americano cocktail with gin instead of the typical soda water. Drawing inspiration from Mr. Negroni's pioneering spirit, this modern iteration goes beyond the classic bitter and sweet flavors, imbuing it with layers of citrusy and grassy notes from hay. The addition of cacao and vanilla brings forth a coffee-like flavor profile, while a touch of cherry lends a vibrant flourish.

Complementing the cocktails, C108 offers a selection of tavern-inspired bar bites, designed to be thoughtfully paired with the drinks. The Patty Melt serves as a delectable reminder of when the humble burger was first invented, featuring succulent cooked meat between slices of toasted bread. Patty Melt is a perfect filling option, tender beef and pork patty are topped with Gruyère melted cheese and sautéed sweet caramelized onions, encased between crispy grilled bread.The savory Fried Olives is served with a special tangy and spicy house blend sriracha and mayonnaise.

During the day, the cafe is led by seasoned barista and C108 co-founder Phoenix Tong who specializes in Roasted specialty coffee. With an in-house roasting studio, Phoenix and her team meticulously select single-origin beans from diverse global regions, then roast and blend these premium beans to perfection. Offering a range of brewing styles, C108 empowers coffee connoisseurs to explore the full sensory experience. From the precision of siphon and hand-drip methods to the bold nuances of espresso, each cup is a testament to their commitment to quality. The coffee beans are sourced from Brazil, Guatemala, and Colombia, each with their own unique flavor characteristics, blended and roasted in-house to create a complex and rich coffee flavor.


For a refreshing respite on summer days, try the Coconut Mango Blackcino - a masterful fusion of fruity, fragrant notes that beautifully balance the coffee's rich complexity. Each handcrafted ceramic cup bearing the "C108" branding serves as a testament to the meticulous care and attention poured into every beverage.

For a light bite, diners can choose the hearty Salmon Bagel, featuring a delightful blend of tender baked salmon, rich smoked salmon, homemade pickled onions, and peppery arugula, all sandwiched between a freshly baked bagel. For those who prefer a vegetarian option, definitely do not miss the divine Tofu Sandwich, where silken tofu is meticulously fried to achieve a golden, crispy exterior that gives way to a soft, pillowy interior, paired with the irresistible zing of tangy Sriracha. For more substantial choices, there are pasta dishes like Spicy Tomato Pasta or Mentaiko Pasta. The Mango Pomelo Parfait artfully reimagines the beloved Hong Kong classic "楊枝甘露" (Mango Sago Dessert with Pomelo), featuring a luscious mango sauce base, punctuated by soft coconut jelly and juicy pomelo segments for a delightful interplay of flavors and textures.
